SHOPPING!!!!

Today Animal had more exams so we went shopping!! I got a t-shirt with flowers and a vest top with boats on it. Sol got a bouncy ball and Seb got jeans and a UFO disc flinging toy. I went into two shops, one where I got the clothes and the toys and the other where we got some juices and sweets. When I got home Olivia was hyper and chewed every thing and anything she could fit in her mouth.Daddy was at work so we baked cupcakes before Mummy went to work for our neighbour who’s birthday is tomorrow. I also made a card which had cupcakes on.

We made twenty four cupcakes from this recipe.

You will need:

Extra equipment:
A bun tin(s) and paper cases

Ingredients:
6 eggs
300g butter – softened
300g sugar
350g self-raising flour
2 teaspoons vanilla essence
4 drops scarlet food colouring (optional)

For the topping:
300g butter – softened
500g icing sugar
2 teaspoons vanilla essence
4 drops of hot water
4 drops of scarlet food colouring

1. Put the paper cases in the bun tin(s).

2. Crack the eggs into a bowl and beat lightly with a fork.

3. Place the butter, sugar, flour and vanilla into a large bowl. Add the beaten egg and four drops of scarlet food colouring.

4. Beat with an electric mixer for two minutes, untill the mixture is light and creamy.

5. Use a teaspoon to transfer equal amounts of the mixture to the paper cases. Bake the cupcakes for 18-20 minutes. Leave them to cool on a wire rack.

6. For the topping, beat together the butter and icing sugar. Once well mixed add the vanilla, food colouring and water. Beat untill smooth and creamy. Swirl over your cupcakes and decorate with sprinkles.
